Some restaurants own a mealtime; République owns the whole day. The concept

Husband-and-wife chefs Walter and Margarita Manzke split the stage: he leads the French kitchen, she runs the pastry side that won her a James Beard Award in 2023. The space shifts personalities with the light — bright and bustling café by day, glowing French dining room by night — which is exactly why locals never tire of it.

What to order

Morning calls for a croissant or kouign-amann straight from the case. At brunch, join the cult of the kimchi fried rice or go for the skillet shakshouka. Dinner is for sharing escargots, twirling handmade pasta and splitting a dry-aged steak — and dessert is non-negotiable, because skipping Margarita’s sweets here is a rookie mistake.

The space

One of the most beautiful rooms in Los Angeles: a long hall of exposed brick arches under skylights, patterned tile floors, a pastry counter that looks like a jewelry display, and an open kitchen flickering at the center. In the evening the arches catch the candlelight and the whole room turns golden — bring someone you want to impress.
